Good Things Take Time

I have one mantra for cooking.

Low and slow.

I never go wrong whenever I follow this rule. Meats always come out fall-off-the-bone tender and flavors from the different spices and ingredients beautifully come together.

Good things take time.

Not only with food but with most everything else.





They all need to go through a seasoning period, through boiling points, before everything - all experiences and hard-fought lessons - begin to bear fruit.

Time not only makes sense of failures, it creates something beautiful out of it.

Nothing great ever came out of hurried efforts and short-term thinking.

Let things marinate.

Stew over them.

And in the end, you'll enjoy something quite delicious.
